Fleming’s Prime Steakhouse & Wine Bar.

As a connoisseur of fine dining and exquisite wines, my expectations were high as I stepped into Fleming’s Prime Steakhouse & Wine Bar. Known for its exceptional steak and sophisticated wine selection, Fleming's had been on my radar for quite some time. The promise of a culinary escapade featuring ahi tuna poke stack, crispy maitake mushrooms, filet mignon with lobster, and a distinguished Rosé wine from Rogue Valley in Southern Oregon, was simply irresistible.

The ambiance of Fleming’s struck a chord of elegance the moment I walked in. The lighting was warm and inviting, casting a soft glow over the polished wood and fine table settings. A gentle hum of conversation filled the air, melding with the subtle clink of wine glasses, setting the tone for an evening of gastronomic indulgence.

My culinary journey began with the ahi tuna poke stack. The dish was a masterpiece of flavors and textures – the freshness of the tuna, the slight heat from the seasoning, and the crunch of the crispy wontons created a harmonious balance that tantalized my taste buds. It was a refreshing start, awakening my palate for the courses to follow.

The chosen wine for the evening, 'Two Birds' Rosé from Rogue Valley, was an impeccable match for the meal. Fleming's had managed to strike a delicate balance between popular, well-known labels and unique, lesser-known wines, offering an educational journey for the novice and an exploratory adventure for the connoisseur. Wine Tasting: Two Birds Rosé, Rogue Valley, Oregon.

Nose: On the nose, Two Birds Rosé exudes a bouquet of summer fruits. There are immediate hints of ripe strawberries and raspberries, intermingled with subtle notes of rose petals and a hint of citrus zest. As the wine opens up, there's a whisper of herbs, perhaps a touch of lavender, adding complexity to its aromatic profile.


Palate: Tasting Two Birds Rosé is like taking a leisurely stroll through a summer garden. A delightful representation of Oregon's winemaking prowess, this wine is a must-try for Rosé enthusiasts and novices alike.

As the meal drew to a close and I took the last sips of the Rosé, I reflected on the experience. Fleming's had not only met but exceeded my expectations. The combination of the exquisite food, the perfectly paired wine, and the elegant atmosphere made for an unforgettable evening.
